"Organic" isn't just a word on our menu — it's officially certified and documented. Here's an overview of what's really behind our breakfast.
Certified, not just claimed
Our breakfast is certified by ABCert AG, a state-approved organic inspection body, under the German regulation for organic catering (certificate no. 6LRP7UOMBZSW). Since March 2022 we've also been a member of BioHotels.de, a Europe-wide network of hotels with consistently ecological operations and certified organic quality.
Where our ingredients come from
We rely on long-standing, in some cases decades-old partnerships with producers from the region: organic cheese from Hofkäserei Zeiz, organic wines from Weingut am Stein, fresh free-range organic eggs from the Dengel family in Neubrunn, regional honey straight from the beekeeper (Bio Imkerei Stephan), and artisan baked goods from Webers Landbäckerei — fresh daily, from the region.
Small portions, less waste
Our breakfast buffet deliberately follows the principle that "small portions guarantee freshness and reduce food waste" — rather than keeping large quantities on hand, we replenish more often in smaller amounts. We also deliberately avoid single-portion packaging.
Growing vegan and vegetarian selection
The plant-based selection at the buffet keeps growing, with many vegetarian and increasingly vegan options. And because enjoyment is also about the eye for us: since May 2025 we've displayed rotating exhibitions by regional artists in our breakfast room — free of charge and open to all guests.
Why this matters to us
Short supply routes, real partner suppliers instead of anonymous supply chains, and a breakfast that's verifiably certified rather than just advertised — that's the foundation for a breakfast we're genuinely proud of.
